Monday nights are my breakfast for dinner nights. So last night I made this and it was a hit with my family. Super easy and it was great on the budget too!
8 frozen hash brown patties
4 cups shredded cheddar cheese
1 package cubed fully cooked ham (2 cups) (I am sure you could use sasuage, bacon, or anyother meat also)
7 eggs
1 cup milk
1/2 tsp salt
1/2 tsp ground mustard
Place hash brown patties in a single layer in a greased 13 x 9 in baking dish. Sprinkle with cheese and ham. In a bowl, beat eggs, milk, salt and mustard. Pour over ham. Cover and bake at 350 for 1 hour. Uncover; bake 15 minutes longer or until edges are golden brown and a knife inserted near the center comes out clean.
Yield: 8 servings.

mmmmm...I love a hot breakfast. Just an FYI, I have one similar to this and you make it in a crockpot, layering it the sameway, and cooking it on low for 8 hours. This works out really good for a hot breakfast in the morning.
