"Easy" Chicken Enchiladas

What You Will Need:
1. 2 cans cream of chicken soup
2. 1/2 pint sour cream
3. pinch of garlic powder
4. 1 can diced green chilies
5. 1 1/2 cups diced onion (I use dried minced onion)
6. 3-4 chicken breasts, cooked and diced (I use chicken tenders)
7. 1 dozen flour tortillas
8. grated Monterey Jack cheese (I use the chedder/jack mix from costco)

saute the onion in a little bit of butter until softened (about 5 minutes)
Mix first 6 ingredientstogether in a large bowl.  Spoon a bit of the chicken mixture into each tortilla. roll up and place side by side in a 9 X 13 baking pan. Pur remaining mixture over enchiladas and sprinkle with cheese.  Bake 30 minutes at 350.




This is one of David's favorites.  Some of the kids like it, however some don't.  I guess I can't please them all.

Our family loves TACOS! It is one of Geoffrey's favorite dishes. Eli hasn't had a "real taco" yet, but he is definitely getting a taste for the meat and toppings. Your enchiladas look yummy!

I like making poppyseed chicken casserole, even though I rarely use the poppyseeds. But I can't wait to get home and try your chicken enchilads casserole. I'm always trying to find good chicken recipes, and your's looks very yummy!

My mom's chicken enchilada recipe is almost exactly like yours. Just a few minor changes.

Okay, three easy meals I like to make and my family likes to eat.
Sloppy Joe's, a skillet dish that we call All American Hot Dish, and a new recipe for us, Sesame Soy Steak.
And yes, I usually use moose meat for all three of these recipes.
But really I like anything I can put in the crock pot and have ready a few hours later dinner. One of my favorite crock pot recipes is Cranberry Chicken. I actually found it in that crock pot cook book you gave me!

I should point out that the two recipes my mother suggested are delicious, but I wouldn't consider them "easy". Tasty for sure, but they take a while to prepare, especially until you've made it a few times.
